His Excellency Mr. Supark Prongthura, Ambassador of Thailand to Jordan, together with Mrs. Siriwan Prongthura, spouse of the Ambassador, Mr. Jaque Rossel, Director of the Royal Academy of Culinary Arts (RACA) and his spouse, Mrs. Marisa Rossel, Mr. Maher Shakhatreh, President of the Jordan – Thailand Friendship Association and the chefs of the Thai Residence participated as a panel of judges in the Creative Cooking Competition using ingredients from Thailand at RACA.
This activity is the second day of the Thai Culinary Day at the Royal Academy of Culinary Arts, held duirng 7-8 May 2025, which aims to elevate Thai cuisines and Thai products to the global kitchen.
Ten teams of senior students from RACA competed in creating two menus, a main course and a choice of either an appetizer or dessert. It was also compulsory that each menu contains at least six Thai ingredients. The menus were not limited to only traditional Thai food but can also include a modern and fusion style.
The team that won the first prize presented Shreded Beef with red curry on the bed of mashed potato blended with fish sauce and coconut cream for the main course. And for the dessert, the winning team presented a Layered cake with coconut cream topped with mango puré and lychoo syrup. The second prize winners presented a homemade yellow-masman pasta, served with red curry sauce for the main course, and for the dessert the team presented a sticky rice pudding served with sweet green curry sauce and mango-lychoo compot.
The third prize winner presented a Tom Yum flavoured meatball, served with pad thai noodles and red curry sauce for the main course and a puffed pastry with caramelized taro, served with lychee and mango compot and coconut cream custard for the dessert.
